The Best Chicken Ever

Mediterranean Marinade for Chicken

1/3 C Olive Oil

4 Garlic Cloves, grated or pressed

2 tsp Paprika

2 tsp Coriander

2 tsp Oregano

2 tsp Ground Cumin

2 tsp Curry Powder

2 tsp Sriracha Sauce

1 tsp Kosher Salt

1 tsp Chili Powder



Combine all ingredients and toss chicken to coat well. Marinate for 30 minutes, up to over night. For the most delicious version, grill the chicken!



I have to tell you, this was purely a Hail Mary find. A version of this spice blend belongs to a completely different dish that is very much loved in my house. BUT. We love snacks and wine for dinner some weekends. I usually make babaganoush, tzaziki, hummus, and various dipping instruments. Sometimes there are olives, nuts, or feta added to the platter, sometimes not. One particular weekend, we hadn’t eaten much all day and we were pretty hungry. I pulled this out of a hat, accidentally added chili powder, and we feasted on the best chicken skewers ever!


If you aren’t into bold flavors, this probably isn’t your best bet. You can absolutely cut the spices in half and it is still great! It does calm down the flavor a bit. You could also use this on whole chicken breasts or thighs and it would reduce the surface area that was seasoned.


Can I tell you though? This makes for some boldly flavored, majorly delicious chicken! Our favorite way to have this is to cube the chicken before marinating, then skewer the cubes alternating with thinly sliced lemon. The lemon gets all crisp on the grill, and it lends a perfect flavor to this blend. Bonus points if you slather some naan with hummus and throw some chicken and lemon on top. Add a glass of your favorite wine and you have yourself dinner fit for royalty!
