Overnight Oats
2 C Rolled Oats
2 C Milk (of your choice - I use 1%)
1 C Plain Greek Yogurt (I use nonfat, use what you prefer)
1/4 C Chia Seeds
1/4-1/2 C Honey - to taste
Combine all ingredients in a large bowl and mix well. Divide mixture between 6 dishes. Cover and refrigerate for
at least four hours, preferably overnight.
Top with whatever you like! This time, I made Almond Joy inspired oats by adding shredded coconut, sliced almonds, and mini chocolate chips. I also made apple pie inspired oats as well - I finely chopped apples and pecans, added both, then drizzled with maple syrup and a sprinkle of cinnamon.
The toppings are really up to you - use your imagination! PBJ your fave? Hook it up! Fresh blueberries? Mango? Strawberries and cream? The sky is the limit!
I recently started a new job where we are really, really spoiled! We don't have to go into the building if we would prefer to work from home, but the perks when we do go in are pretty sweet! Breakfast and a "snack wall" are only a couple of the cool things we have.
One morning, I wasn't feeling the hot breakfast that was offered, so I grabbed some apple pie overnight oats. I was in love! Not too sweet, crunchy apples, and a full belly. With the Greek yogurt, chia seeds, and oats, these little cups are chock full of fiber and protein.
This would be a great grab and go for kiddos, to! Let them help you assemble the bowls, and add the toppings that suit them best. Everyone gets what they want with ZERO morning prep! That's a win in my book!
I'm currently obsessed with these little bowls! I hope you enjoy creating a healthy, filling breakfast as much as I have!
